Valls Calçot: The Uniquely Tender Onion from Catalonia

Hailing from Catalonia, the Valls Calçot is a unique variety of onion, typically measuring up to 25 centimeters in length. Its shape falls somewhere between that of a green onion and a leek. This distinct form and nomenclature owe themselves to the traditional hilling technique employed in its cultivation, as it’s known as the “hilled” onion.
Legend has it that this onion was invented in the early 20th century by a farmer from Valls. This inventive farmer devised a method of burying the shoots of garden onions so that a significant portion of their stems remained white and edible. Today, this onion variety has gained such popularity that it even inspired the creation of the “calçotada,” a gastronomic festival where participants grill calçots over an open flame. These tender white stems are then dipped in almond-based “salvitxada” sauce and enjoyed alongside red wine or cava. It’s a celebration of flavors that’s become a beloved tradition.
